Did you ever tried a smoked Carnaroli rice?
Let’s do it together with stracchino cheese and almonds! WATCH THE VIDEO ON YOUTUBE.
First toast the smoked Carnaroli rice in a dry pot and add the salt.
Then pour hot water
Cut the almonds while the rice is cooking.
Finally turn off the stove and cover risotto with a clean towel for a couple of minutes before you add the cheese.
Stir with energy to get a creamy risotto. In Italy we call it “all’onda”!
Put the rice in a dish and add the almonds.
Serve warm and enjoy you risotto mantecato!
The rice I used is a smoked Carnaroli Gli Aironi.
