To get a perfect risotto you need to use the best type of rice. In Italy the best rice for risotto has a Long A grain, a big rice with oval shape.

CARNAROLI
Born in 1945 near Milano, in Paullo.
Nowadays the more appreciated rice for risotto because of the high amylose content.
Great for risotto al dente!
ARBORIO
Born in 1946 in Arborio, a country in the north of Italy.
It has the biggest grain among all the risotto rices .
ROMA and BALDO are very similar rices in shape and size, with a particular difference: Rome has the pearl, typical of risotto rices, while baldo is crystalline.
S. ANDREA
It is, a particular rice cultivated at the feet of the Alps, mountains in the north west of Italy.
Very very good for creamy risotto!
