What’s the best Italian cheese for risotto?
If you want to prepare a creamy risotto you should choose the perfect cheese.

Risotto is most traditionally made with Parmigiano cheese - not Parmesan! It’s a fake - which is stirred in right at the very end of cooking with the stove turned off.
Add Parmigiano directly into risotto with butter to get a creamy risotto.
Fontina is perfect to prepare a cream cheese.
Dice it into cubes and melt it with some milk or cream.
Stracchino is a fresh delicate cheese.
Melt it directly in the hot risotto and stir with energy.
If you prefer a more tasty cheese, use gorgonzola instead of stracchino, one of the most famous soft and aged cheeses in Italy.
Now your risotto is really creamy, perfectly “mantecato”!
